Our Story
Founder by Chef Ian Phoon and his partners, Smoke & Barrel is built around open fire cooking over wood. Live fire, natural heat, and time shape every dish here. Smoke is the perfume of our open flames.
Our cooking is fire led and restrained. We let ingredients respond to heat naturally, without masking them with heavy sauces or prolonged smoking. What we do sits closer to primitive fire cooking than modern barbecue. This is a place for people who are curious about food shaped by fire, not defined by category. More importantly, Smoke & Barrel is more than food. It’s a place where people gather. Where stories are shared over plates meant to be enjoyed, not photographed and forgotten. Where hospitality matters as much as technique, and consistency matters more than trends.
